Ingredients:
- 1 lb ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 small cabbage, chopped
- 3 carrots, peeled and sliced
- 3 celery stalks, chopped
- 8 cups gluten-free beef broth
- 1 can 14 oz diced tomatoes, undrained
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish optional
Instructions:
Set the olive oil on medium heat in a large soup pot
Add the chopped onion and garlic and cook until the onion is clear and smells good
Break the ground beef up with a spoon as you cook it until it turns brown
Chopped cabbage, carrots, and celery should be added and mixed in
Let the vegetables cook for 5 to 7 minutes, or until they begin to get soft
Add the gluten-free beef broth and the chopped tomatoes with their juice
The dried oregano, thyme, and bay leaves should be mixed in
Once the soup starts to boil, lower the heat, cover, and let it cook for 30 to 40 minutes, or until the vegetables are soft
Take out the bay leaves and add salt and pepper to taste to the soup
If you want, you can serve it hot with fresh parsley on top
