Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup granulated erythritol sweetener
- 2 tsp baking powder
- 1/2 tsp xanthan gum
- 1/4 tsp salt
- 1/2 cup mayonnaise sugar-free
- 4 large eggs
- 1/4 cup unsweetened almond milk
- 2 tsp vanilla extract
- 1/4 tsp almond extract optional
Instructions:
Preheat the oven to 350F 175C
Grease a 9-inch round cake pan or line it with parchment paper
In a mixing bowl, whisk together almond flour, coconut flour, erythritol, baking powder, xanthan gum, and salt
Add mayonnaise, eggs, almond milk, vanilla extract, and almond extract if using to the dry ingredients
Mix until well combined and smooth
Pour the batter into the prepared cake pan and spread it evenly
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean
Remove the cake from the oven and let it cool in the pan for 10 minutes
Carefully transfer the cake onto a wire rack to cool completely
Once cooled, slice and serve
