Ingredients:
- 1 cup almond butter
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, mix together the almond butter and brown sugar until well combined
Add the egg and vanilla extract to the almond butter mixture, and mix until smooth
Sprinkle the baking soda and salt over the mixture, and mix until evenly incorporated
Fold in the chocolate chips
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart
Gently flatten each cookie with a fork, creating a crisscross pattern
Bake for about 10-12 minutes, or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
