A vegan twist on the classic Banh Mi sandwich, featuring marinated tofu slices with crunchy vegetables and spicy sriracha, all nestled in a toasted baguette. Perfect for a satisfying breakfast
Ingredients:
- 200g extra-firm tofu, sliced
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1 small baguette, sliced and toasted
- 1/4 cup vegan mayonnaise
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/4 cup fresh cilantro leaves
- 1 jalapeo, thinly sliced
- 1 tablespoon sriracha optional
Instructions:
Put soy sauce, maple syrup, rice vinegar, sesame oil, garlic, and ginger in a small bowl
Put the tofu slices in the mixture and let them sit for at least 15 minutes
Set a skillet that doesnt stick on medium heat
Put in the tofu slices that have been marinated
Cook for about 4 to 5 minutes on each side, until both sides are golden brown
Vegan mayonnaise should be spread on toasted baguette slices
On top of the baguette slices, put slices of tofu, shredded carrots, cucumber, cilantro leaves, and jalapeo
If you want, drizzle with Sriracha
Add the last few slices of baguette on top to make sandwiches
