Ingredients:
- 2 cups cooked sweet potatoes, mashed
- 1 can 15 oz chickpeas, drained and rinsed
- 3 cloves garlic, minced
- 1/4 cup tahini
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons water adjust as needed
Instructions:
Put the chickpeas, minced garlic, tahini, olive oil, and lemon juice in a food processor and blend them all together
If you need to, scrape down the sides of the bowl as you pulse the mixture to make it smooth and creamy
To the hummus, add the paprika, salt, pepper, and ground cumin
Mix again until everything is well mixed
To get the right consistency, add water one tablespoon at a time if the hummus is too thick
If you think the hummus needs more salt, pepper, or lemon juice, add it and taste it again
Put the sweet potato hummus in a bowl to serve
Drizzle with a little olive oil and sprinkle paprika on top
You can eat it with crackers, pita bread, or your favorite vegetables for dipping
