Chicken Curry Laksa Soup is a flavorful and comforting Southeast Asian dish, featuring tender chicken slices, aromatic spices, creamy coconut milk, and chewy rice noodles.
Ingredients:
- 2 tbsp vegetable oil
- 2 chicken breasts, sliced thinly
- 3 tbsp laksa paste
- 4 cups chicken broth
- 1 can 400ml coconut milk
- 200g rice vermicelli noodles
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 cup bean sprouts
- 1 red chili, thinly sliced
- 2 hard-boiled eggs, halved
- Fresh cilantro leaves, for garnish
- Lime wedges, for serving
Instructions:
Put vegetable oil in a large pot and heat it over medium-low heat
Put in the chicken slices and cook them until they turn brown
Add the laksa paste and cook for one minute while stirring
Turn the heat up to low and add the chicken broth and coconut milk
Put in the rice vermicelli noodles and cook for about 5 minutes, or until they are soft
Add sugar and fish sauce to taste
Put some soup in each bowl
Then add bean sprouts, chili slices, and half-boiled eggs on top of each bowl
Add some fresh cilantro leaves as a garnish
With lime wedges on the side, serve hot
