Ingredients:
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3 ripe bananas, mashed
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts optional
- 1/2 cup rolled oats
- For Crumb Topping:
- 1/4 cup whole wheat flour
- 1/4 cup rolled oats
- 1/4 cup brown sugar
- 2 tbsp melted butter
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a muffin tin
Put the whole wheat flour, baking soda, baking powder, and salt in a large bowl and mix them together
Mash the bananas and mix them with the honey or maple syrup, melted coconut oil, egg, and vanilla extract in a different bowl
Add the wet mixture to the dry mixture and mix it in just a little
If you want, you can fold in the chopped walnuts and rolled oats
Fill up each muffin tin cup about two thirds of the way to the top with batter
Add the whole wheat flour, rolled oats, brown sugar, and melted butter to a small bowl
Use your hands to mix the ingredients until the topping is crumbly
Cover all of the muffin batter in each cup with the crumb topping
After the oven is hot, bake the muffins for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean
First, let the muffins cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
