Ingredients:
- 1 whole chicken about 4-5 pounds
- 2 lemons, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions:
Preheat oven to 375F 190C
Remove giblets from the chicken cavity, rinse chicken, and pat dry with paper towels
In a small bowl, mix together minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper
Rub the garlic herb mixture all over the chicken, including under the skin and inside the cavity
Place lemon slices inside the chicken cavity
Tie the legs together with kitchen twine, if desired, to help the chicken cook evenly
Place the chicken breast-side up on a rack in a roasting pan
Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165F 75C and the juices run clear
Remove the chicken from the oven and let it rest for about 10 minutes before carving
Serve hot and enjoy
