Ingredients:
- 1 can 15 oz black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 large sweet potato, peeled and diced
- 1 tbsp olive oil
- 4 burger buns
- Lettuce and tomato slices for garnish
- 1/2 cup mayonnaise
- 2 tbsp chipotle sauce
Instructions:
Set oven temperature to 400F 200C
Black beans, breadcrumbs, red onion, bell pepper, garlic, cumin, chili powder, salt, and pepper should all be combined in a food processor
Pulse until thoroughly mixed but not quite chunky
Four bean patties should be formed out of the mixture and put on a baking sheet covered with parchment paper
Add salt, pepper, and olive oil to the chopped sweet potatoes
Transfer them to an other baking sheet
Bake the sweet potatoes and bean patties in a preheated oven for 20 to 25 minutes, stirring halfway through, or until the sweet potatoes are tender and the patties are firm
To make the chipotle sauce, combine mayonnaise and chipotle sauce in a small bowl and bake
For the final two to three minutes of baking, toast the hamburger buns in the oven
Top each bun with a black bean patty, roasted sweet potatoes, lettuce, and tomato slices to assemble the burgers
Spoon the chipotle sauce over the top, then fold the other half of the bun over it
Enjoy while hot
